125 g/ 4 1/2 oz pine nuts.
125 g/ 4 1/2 oz grated parmesan cheese.
1 large bunch of fresh basil leaves.
1 garlic clove
200 ml/ 7 fl oz of QO Extra Virgin Olive Oil
Salt and black pepper
Heat a dry frying pan over a medium heat. Add the pine nuts and toast for a couple of minutes until slightly browned. Be careful not to burn them.
Place all ingredients, including the pine nuts in a food processor and blend until it becomes smooth, if necessary add more oil.
When ready, you can add it to freshly cooked pasta, or serve it with potatoes, seafood or even toasted bread.
You can store it in a jar covered with olive oil in the fridge.
